Treat Day Wednesday–Brownies with a twist!

It’s Wednesday again!  My how the week goes by fast.  I feel like all I’ve been doing has been baking, which isn’t a bad thing, but for the waistline.  Ah well the sacrifices we make for our children, at least that’s what I keep telling myself.  I’ve actually been pretty good, however yesterday’s white chocolate lemon cake slice, might have been a titch too big, damn good, but too big.

When I asked the girls what they wanted for treat day, because honestly I didn’t have a clue, they both said separately, “brownies”.  So I used my basic brownie recipe and decided to add a little twist.

I made two types.  One type were individual brownies in small ramekins that were baked with a square of Ghirardelli’s white chocolate.  The second type I took a cookie cutter and cut out the basic brownie then stacked two pieces, in between I added a dollop of melted white chocolate. I drizzled both with white chocolate for the finish.  Just for something different.

Type One:

Basic Brownie Recipe:

  • 1 1/3 cup flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup butter (2 sticks)
  • 2 cups sugar
  • 1 cup cocoa
  • 1 tsp vanilla
  • 4 eggs

Mix flour, salt and baking powder then set aside. Melt butter.  Remove from heat and then add sugar, cocoa, and vanilla.  Mix in eggs and then combine wet with dry ingredients.  Bake at 350 for 35-40mins or until toothpick comes out clean.

We also opened our pool today, it was only 90 degrees in the shade.  Wow these North Carolina springs are hard on my old Canadian body.  I’m not going to lie, I like the cold more than the hot.  I didn’t, however, miss the snow this year. Maybe next year!
