Oatmeal Caramel Bars

And the caramel overflowith…ok I had left overs! Plus I had oats, sugar, butter and chocolate!


It’s also the second day of summer break and baking in the oven is my break away from the girls. I love them but it’s going to be a LONG summer. So I put together another treat I’m going to pawn off on the neighbours…it is bathing suit season after all :)

Oatmeal Caramel Bars



  • 4 cups rolled oats
  • 1 cup packed brown sugar
  • 1 cup butter
  • 1/2 cup white corn syrup
  • caramel sauce
  • 2 4oz bars 60% cocoa chocolate
  • 3/4 cup peanut butter


  1. Combine oats, sugar, butter and corn syrup. Form into pan (7x11) and bake at 350 for 12-15 minutes. Let stand for 10 minutes.
  2. Melt chocolate and peanut butter in double boiler.
  3. Pour caramel sauce over baked oats, then pour melted chocolate sauce.
  4. Place in fridge, when set cut into bars.

I wasn’t sure how it would all come together but can I say, DAMN! Two squares later and a big glass of milk. The oats are chewy and the caramel give it another dimension of chewiness. And then there is the chocolate/peanut butter sauce that hardens to give it the 3rd dimension! OH SO GOOD!
