Yesterday she was coming home from the hospital and today she’s six! I seriously blinked and boom she’s a big kid!
Let me tell you about Abby. She’s my drama queen both in temperament and style. She’s got more dresses than Princess Katherine and works every one of them! She loves dance, arts and crafts, acting and most of all singing. The moment she hears a song she loves, bam! she’s singing and dancing along. Her current favourite is “Born this Way” by Lady Gaga. It really is quite the experience to be seen…and heard!
Abby already has an opinion about everything. She likes to make her little sister, Rowan, do what she wants and has artfully mastered making Rowan think it was her idea. It’s really quite something to watch!
Now with this opinionated child you also get a mind that changes a lot. We’ve gone from a Hello Kitty Cake to another princess cake to on Monday deciding she wanted a unicorn cake. AHHHHHHH crap was my first thought.
I already had decided that we were going to do something small and then throw a big party when school starts up again. But then we invited one family friend and then decided to invite her BFF from school since her BFF from next door was away and it was no longer a small little party or cake. So we decided on going to the pool, ordering pizza and having a slightly larger cake.
So I asked my followers and Facebook friends for ideas. Nada, except for using an ice cream cone as the horn. My friend Jen from JPCreatibles, who was up for the challenge, tried to find me some ideas but in the end were above my mental ability after 4 hours of sleep and since we got off the plane on Tuesday at midnight, a carved cake was probably not going to happen. But I had to try, I mean who can resist this mug???
So I got to work! I had some leftover fondant, so I modeled the topper and made the flowers, which was not too terribly brain taxing on Wednesday. Once the unicorn was made Abby promptly came over and said, in no uncertain terms, “Mummy, the horn should be pink!” and then walked away. Yes dear!
I’ve always wanted to make the rainbow cake (I’ve been a lot about the rainbows recently) and was inspired by Rosie from Sweetapolita who used Kaitlin from The Whisk Kid’s rainbow cake recipe. So I baked on Wednesday too. The colours were vibrant and I loved it! HELLO COLOUR!!! I used Americolour and it’s amazing!
This morning I put it all together. Still tired but it was Abby’s actual birthday and it had to be done for my princess!
Recipes:

For the buttercream go here
For the fondant go here
So as I’m rolling out the fondant it was beautiful and then I placed it on the cake and it cracked. If it was for anyone else and if I wasn’t dead on my feet, I would have removed it and started again. It’s not perfect but for a 6 year old who won’t remember that the fondant wasn’t perfect only that it was the perfect colour pink, all was good!
You can really see the cracks here, but doesn’t the unicorn look so cute!!! Especially with it’s pink horn :)
Now the piece de resistance!
I am so loving the colour. It really does give off the “wow” factor.
The cake was a big hit, even the lifeguards at the pool gave me a thumbs up and a couple asked for my cards, so despite all the flaws I see, I think I did A-OK!
So Happy Birthday to my Princess Abby. We love you so much!
Thanks for looking!
