Treat Day Wednesday–Digestive Cookies

Rob and I were in World Market the other day, just looking about when I saw true English Digestive cookies.  I love them so I bit the bullet and spent the money on the cookies.  When we were in England many moons ago, I went to the Marks & Spencer and bought several sleeves of the cookies to bring home.  Even in British pounds they were cheaper, despite the flight across the Atlantic :)

So I brought these little devils home and both Abby and Rowan were like, what’s that?  Try one I told them and then they proceeded to eat the sleeve.  So I thought I’d look up a recipe for the cookie and see if I could replicate them at home.

I used King Arthur Flour’s recipe from their website:

  • 1/2 cup (2 ounces) King Arthur Unbleached All-Purpose Flour
  • 1 1/2 cups (6 ounces) King Arthur Traditional Whole Wheat Flour
  • 1 teaspoon baking powder
  • 1/2 cup (1 stick, 4 ounces) unsalted butter at room temperature
  • 3/4 cup (3 ounces) confectioners' sugar
  • 1/4 cup (2 ounces) cold milk
  1. Preheat your oven to 350°F.
  2. Measure the flour and baking powder into a bowl of a food processor. Pulse until butter in incorporated.
  3. Add remaining ingredients except milk. Pulse until combines and then add milk.  It should form a firm dough.
  4. Roll the dough out to a bit more than 1/8 inch thick and cut into any desired shape.
  5. Place on greased cookie sheets, prick evenly with a fork, and bake until pale gold, between 15 and 20 minutes. Mine were just over 15.
  6. This recipe made 18, 2” cookies.

I then dipped (a few) ok all into some semi-sweet chocolate, because as you know, every thing is better with chocolate!

The little stars you see were made by Miss Rowan.  No chocolate mummy, no chocolate! 

So how do they taste?  Not exactly the same but really damn good.  They have the same texture but not as sweet.  The originals biscuits called for wheatmeal, which is the whole grain, whole wheat is the processed one that removed the grittiness. I couldn’t find wheatmeal, so then I found and followed the recipe above.  Probably why the taste is a bit different.  Now dipping them in chocolate, genius!

Rowan gave them two thumbs up! she had to, because her mouth was full :)

  3. I love digestive cookies! Marks & Spencer makes great ones (like their oat cakes too). For you to have found this recipe and adapted to make these cookies was great, dipping them in chocolate even better.
