It’s our last TDW before we head south for Christmas. These have been made for a while but the girls love them! It’s definitely one of my favourite Christmas cookies too!
Gingerbread. There is just something about it that screams the holidays and it was the only cookie my grandmother never made. I mean she made so many at this time of the year, but this wasn’t one of them.
I decided, several years ago, to rectify that fact. I started with Martha' Stewarts classic gingerbread and as usual, changed it. I’ve tried several different recipes but always come back to this recipe, so I’m sharing it with you!
Recipe:
- 2 sticks unsalted butter softened
- 1 cup brown sugar packed
- 2 eggs
- 4 tsp ginger
- 4 tsp cinnamon
- 3/4 tsp ground white pepper
- 1 1/4 tsp salt
- 1 cup molasses
- 6 cups flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- In mixer bowl, combine butter and sugar until fluffy
- Add eggs, spices and molasses.
- Combine flour, soda and powder and gradually add to butter mixture.
- When completely combined, bring onto counter surface and knead until smooth and not sticky.
- Divide into thirds and cover with plastic. Chill for at least one hour.
- Cut into desired shapes, bake at 350 until slightly browned (about 7 mins)
- Let cool and decorate.
- Enjoy.
I made these into mini cookies and am giving them as Christmas prezzies to the kids teachers. I also decided with the decorations, less is more. And I love the way they look!
I found these awesome boxes at Michaels. I just love Chinese take out boxes for gift boxes. I used almost 1/2 of the dough and it made about 100 mini cookies.

ReplyDeleteI love the way you decorated these! And thanks for a "tried and true" gingerbread recipe. I never make gingerbread cut-outs at Christmas either because we always do sugar cookies, but next year I want to!
