And we’re off…

Welcome officially to 2012 at Trilogy Edibles! 

My first post of the year and to be honest, I wasn’t sure what to make.  We got back from Florida late Sunday night after 12 hours in the car and then woke up Monday morning with nothing to bake.  Then it came to me, homemade biscuits.

CRAP!  No food in the house.  That’s what happens when you haven’t been home in 10 days and whatever you do have usually says hi back…ew.

Off to the grocery store to stock up was the first order of business.  I had to leave the kids on the couch where they were watching cartoons and announcing they were S   T   A   R  V   I   N   G!!! as only a 3 and 6 year old can do.

I also had to pick up the cat who was at camp whilst we were away.  Good Times all around.

When I walked back in the house, the girls were begging for breakfast and the cat was saying things that can’t be repeated here.  I know she wasn’t actually talking but there were definitely expletives being used in her language.  Many of them starting with the letter B and directed straight at me :)

Then I got caught up in the whirlwind of making breakfast and forgot about baking anything.  Fast forward a couple hours and the house is eerily quiet.  One child is next door and the other is out with her father who “needed” to go to the Apple store…yeah right.  But I’ll take the quiet house any way I can get it!

My first thought for baking was biscuits, at least it was for breakfast.  Then I was reminded by my friend Dorothy at Crazy for Crust’s and her fudge post about my intentions to make real, get down and dirty, kneaded fudge.  But I was missing a few items, so back to biscuits.  It still works because I’ve got a pot roast in the slow cooker and biscuits go great with pot roast.  Especially Cheesy Biscuits.

So the first recipe of the year is Cheese Biscuits.  What I like about biscuits is that they are easy, you don’t have to make them perfect looking and I get to use my most treasured baking utensil.  My grandmother’s rolling pin.  You all know how much I love my gran, so using her pin makes me feel like she’s here.  She made a mean biscuit too :)

Check out this bad boy!  It’s a solid piece and perfectly balanced. I love it!

Recipe: adapted from Alton Brown of the Food Network

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 tablespoons cold unsalted butter
  • 2 tablespoons shortening
  • 1 cup buttermilk
  • 1 1/2 cup shredded cheese
  1. In mixing bowl, combine flour, baking powder, baking soda and salt together.
  2. Add cut up butter and shortening and combine by rubbing your fingers through the flour mixture.  It should look like dry oatmeal when done.
  3. Add buttermilk and cheese and mix until just combined.
  4. Turn out on floured surface and knead lightly then roll out to 1 inch thickness.
  5. Using 2 inch circle cutter, staying close together to minimize waste, cut out circles.
  6. Recombine left over dough, trying not to over mix.
  7. Place on baking sheet so the circles just touch, bake at 450 for 15-20minutes until golden brown.
  8. Let cool and serve!

  2. Yum! I love biscuits...anything carb loaded. My cat is like that too when we get home from a trip. Well, actually, she's like that every day. I think it's a calico trait. :) Thanks for sharing on Crazy Sweet Tuesday!

  3. I LOVE me some biscuits...but I have to laugh...we refer to the "bum bum" in our house as biscuits....I'm going to pinch your biscuits! I am sure you were just dying to know that.
