Treat Day Wednesday–Homemade Peeps on a Stick!

I know you’ve heard this before, but I’m back :)

Today is the first Treat Day I’ve been able to do in a few months and since the Peeps out of the package were such a big hit, I thought I’d make my own!

Now they were just plain white, but Rowan made sure I air brushed them pink and I always try to do what Rowan tells me to do in the kitchen.  She hasn’t been wrong yet :)

Home Made Marshmallows (adapted from Food Network Recipe)

  • 1 1/2 packages of unflavoured gelatin
  • 1/4 cup cold water
  • 6 oz white sugar
  • 1/2 cup corn syrup
  • 1/8 tsp salt
  • 1/4 cup cold water
  • 1/2 tsp vanilla
  • air brush colour of choice or sprinkles
  1. In bowl of stand mixer combine gelatin and 1/4 cup water, stir to combine then let sit.
  2. In saucepan, combine sugar, corn syrup, salt and 1/4 cup water.  On medium heat bring to boil covered, 3-4 minutes.
  3. Place candy thermometer on side of pan, bring up to soft ball stage or 240 degrees F.
  4. Remove from heat.
  5. Turn stand mixer with whisk attachment, slowly add the sugar syrup to gelatin slowly.
  6. Once completely combined turn on to high and let do for 10 minutes.
  7. Add vanilla and beat until mixture is thick and cooled down.
  8. While whisking, prepare a 12”x8” pan by spraying with cooking spray and then dusting with icing sugar.
  9. Pour marshmallow batter into pan and use a rubber spatula sprayed with cooking spray to press into pan.
  10. Sprinkle with icing sugar or sprinkles and let sit uncovered for 3 hours.
  11. Using cutter of choice (make sure you dip in icing sugar between cuts or they will stick), cut out marshmallows.
  12. Place on parchment and airbrush with colour of choice.  Place on sticks.
  13. Enjoy!

These were a lot easier than I thought they would be and they taste amazing.  All the left over scraps may be eaten by Rob and I while the kids enjoy their sticks!

  2. Hahahahahaha Melissa ^^ and I recently discussed this very thing! Yours look perfectly "firm", not gooey at all!
    I am anxious to ry them myself! I am getting a hands on marshmallow workshop with weekend from a professional marshmallow gourmet ;) I am so excited!

  3. Wonderful first attempt Karen and Rowan is so right to have had you airbrush them pink. Do I see a lot more homemade marshmallow treats coming out of your kitchen? I hope so :)
