Pre-Easter Brunch cupcakes

Since we’ve only been in Cary, NC for less than six months, we haven’t met a lot of people. So when we got an invitation to a pre-Easter brunch we thought it was a great way to meet new people. So I made lemon-vanilla cupcakes with lemon buttercream and decorated with Easter colour fondant flowers. I also took this as an opportunity for a little more shameless self promotion!


Here are the cupcakes out of the oven. Some are a little browner than I’d like but nothing a little icing can’t fix!

I also made the fondant flowers and leaves before hand. Rowan was a great helper, although a few were sacrificed for taste testing.

Assembly was fairly straight forward.



  1. Brush each muffin with a lemon simple syrup,
  2. Pipe buttercream in swirls, starting on the outside moving towards the centre, and then
  3. Add fondant flowers and leaves…and voila! Rowan was my big helper here too!

The day was beautiful yesterday and will be again tomorrow, today was cold, cold, cold! No worries, the cupcakes were enjoyed by all and I got lots of compliments! (pics were taken yesterday!)
