Batter Up…Peanut Butter Balls!

The gauntlet was thrown by my friend Cristin at Cristin’s Cookies.  Every couple of weeks she has a cookie challenge and this week’s was baseballs.  She even challenged me directly on my Facebook page.  Since I have to make a few sugar cookies next week (it’s Canadian Thanksgiving on Oct 9th), I felt adding a few more might be too many for the hips, so I decided to make these.

Peanut Butter Base Balls

I haven’t figured out how to get the candy melts coating smooth.  I tried different ways; dipping, rolling and even pouring it over top but it’s too thick.  Next time I’ll just use white chocolate.

Here’s what you’ll need!

Recipe – from my awesome sister-in-law Catherine!

  • 2 1/4 Cups  Crunchy Peanut Butter
  • 2 Cups Icing sugar
  • 1 1/3 cups graham cracker crumbs
  • 3/4 cup (1 1/2 sticks) unsalted butter, softened (really soft or it will not mix in with the peanut butter)
  • 16 ounces chocolate, melted (for traditional balls, but for today’s baseballs, white and red candy melts)

Directions:

  1. In a large bowl, combine peanut butter, confectioners' sugar, graham cracker crumbs, and butter. Mash together until combined.
  2. Form the mixture into balls, place on cookie sheet lined with wax paper. Transfer to the refrigerator until hardened, about 30 minutes.
  3. Dip the peanut butter balls into the candy coating and set inside mini paper cupcake forms or place back on the cookie sheet if you do not what to put them in wrappers.
  4. Pipe the red stitching to make them look like baseballs.
  5. Let the coating set before serving.

Despite their non-smoothness, they were damn tasty!

So here you go, baseballs.  I’m sure you can make them any shape you wanted!
