Treat Day Wednesday–Chocolate Chip Cookie Dough Brownies

So you’ve probably noticed I’ve been away for over a week.  Well the plague came to visit our house and I have never been so sick in my life.  Ok, it’s not the plague but holy cow it was awful.  All four of us went down hard.  Rob came home with a cold from London and it spread through our house like wildfire.  I wanted a prezzie but not this one :)  We even had to postpone Rowan’s 4th bday party.  No worries, it’s been rescheduled for Feb 26th.

I’d like to thank you all for your warm wishes and hopes for a quick recovery.  Loved the wishes but didn’t quite get the quick recovery.  I’m into day 8.  I even thought I was getting better and then took a nose dive which included a trip to the walk in clinic.  They were so awesome at the clinic. I’m sure dealing with sick people all the time takes it toll, but they were great.  Especially after I passed out on them during my chest x-ray.  Apparently not eating for 4 days and then being put on a nebulizer to help with breathing causes black outs.  I mean, who knew?

Well I’m back to eating and breathing properly, the girls seem to be on the mend too.  Poor Rowan got the chesty old man coughs like me and Abby bounced back a little quicker.  Rob too is on the road to recovery.  I do hope this fulfills out cold quota for the year.  I don’t think I’ve ever been through this when the entire household gets sick before.  I don’t recommend it.

Ok, so enough’s enough! 

We are better but not perfect and it’s Wednesday, so I went with simple and loved for Treat Day!

I saw these on Pinterest, you’ve seen them too!  Chocolate Chip Cookie Dough Brownies.  We love brownies and who doesn’t like eating the chocolate chip cookie dough, so putting together made perfect sense!

Recipe: Chocolate Chip Cookie Dough Brownies (adapted by Brown Eyed Baker)

Brownies: I love my brownies, so I used mine.

  • 1 cup butter
  • 2 cups sugar
  • 1 cup cocoa
  • 4 eggs
  • 1 tsp vanilla
  • 1 1/3 cup flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  1. Preheat oven 350F
  2. Melt butter and mix in sugar and cocoa.
  3. Mix in eggs and vanilla. 
  4. Finally add the flour, baking powder and the salt.
  5. Once combines, pour into baking sheet and bake 30-40minutes, until knife comes out clean.

Chocolate Chip Cookie Dough:

  • 1 1/2 cup butter softened
  • 3/4 cup sugar
  • 3/4 cup light brown sugar
  • 3 tbsp whole milk
  • 1 1/2 cup flour
  • 1 1/2 tsp vanilla
  • 1 1/2 cup mini chocolate chips
  1. Mix all ingredients together and pour over cooled brownies.  Flatten out and chill for 1 hour.
  2. Cut out and store or eat all at once :)

So as we continue to get better, I have lots of fun ideas brewing!

  1. I can't imagine everyone in the family all being so sick at the same time. What a horrid week for all of you. I know you say that you are better but not completely well so I'm hoping that you are continuing to get lots of rest and not overdo anything for another little while. Good to hear that you are able to eat again. Keeping fingers crossed that this illness is a bad memory come the 26th so everyone can enjoy celebrating little Rowan's birthday.

    These cookie dough brownies...best of both worlds!

  2. I really hope you all feel better soon! We've had a bug here too, but it's a kind of cold-y/fluey thing that you can still walk round with. Every once in a while you have a bad day or night, but then it seems to improve. Sounds like you got the worst of the British bugs, and we have one of the less bad ones!

    Those brownies look amazing, and I know at least two people who would be absolutely delighted by them...I may just have to make them! Thank you for sharing them!

  6. Ugh, SO sorry you were so sick! That's the worst! I hope you are starting to get back to normal in your home and totally on the mend.... And with these brownies, how could you not be? :-) YUM! Two of my have things in the world!

  9. These look soooo good, we are trying the recipe right now? Do you know how long the shelf life is for them? The milk in the uncooked cookie dough has me wondering? Thanks so much for sharing the recipe.
