Treat Day Wednesday–Caramel Crispies Dipped in Chocolate

As many of you know I’ve been dealing with bad back pain and over the last week my life has come to a standstill. So it’s with a heavy heart that I must put my blog on the shelf for the month of December.  I will miss chatting with you a couple times a week and sharing whatever I’ve created in the moment, but sitting for longer than 5 minutes at a time just leads to more pain.  So I’m just going to take a break and try to figure out what’s wrong.  I have an MRI on Saturday and I’m hoping they’ll have a path to no pain!

But before I go I made these little devils. 

Last week I bought a package of the Skinny Cow Caramel Clusters for me but it’s Rowan who LOVES them. She actually stole the pack I started. So I set out to re-create them.  I took some rice crispies, some caramel sauce and some dark chocolate and voila!

  • 1 cup rice crispies
  • 3 tbsp Trader Joe’s caramel sauce (or any caramel sauce) Thanks to Melissa at The Baked Equation for introducing me to this divine sauce.
  • 1 1/2 cups chocolate chips melted.
  1. Mix rice and caramel together.  Form into balls and place on parchment paper.  Chill in freezer 15 minutes.
  2. Dip into melted chocolate and return to fridge to set up.
  3. Enjoy!

Now these aren’t as low-cal as the skinny cow version but are way better tasting, at least in my opinion.  But you don’t want my opinion, you want the 4 year old’s opinion.  I got two thumbs up as her mouth was full!

  1. Karen I'm so sorry that you are having so much trouble with your back. Been reading your posts on FB and I can't imagine how you are managing. I'm going to miss visiting you here but I'm glad that you are taking the time to heal and hopefully, you will heal completely. Good luck with the MRI. Look at it as the first step to freeing yourself of these back issues for good.

  5. Oh my, these looks SO good! I'm really sorry to hear you are struggling with back pain. Hope that your MRI helps to find a way to bring some relief. I have had back problems in the past, and am struggling a bit at the moment, but I have found chiropractic, in particular the McTimoney method, to be incredibly helpful. Combined with reflexology and Pilates it is helping me get back to normal. Wishing you a very speedy recovery, Karen!

  7. I am so sorry that your back is still an issue for you! I have had to slow down this month as well, needing another ear surgery on the 14th to hopefully give me back my balance. So I think you and I need to do a virtual toast for New Years and a healthier 2013! Praying you get results for a solution on Saturday.
