So while watching Will and Kate tie the knot was a big deal for everyone last week. In our house, the big wedding to celebrate is my best friend Sapna’s wedding to her man Damian next week. I couldn’t be more excited to wish them the absolute best. Unfortunately I can’t celebrate it with them as I’m in the middle of my immigration application process and therefore can’t leave the USA. Sucks it does!
When their wedding was going to be in Toronto and I was still living in Ottawa, I was going to make their cake. Now they are getting married in Tulum, Mexico on May 9th and so I decided to mock up a cake for them so we here can celebrate with them! Now you’re probably asking why I would do this? And I say, what’s a wedding party without a cake? Sapna had always told me she wanted peonies and roses on her cake. So for you Sapna, I give you your wedding cake…
Off-set layers with “pearl” borders and gumpaste peonies and roses!
The cake itself, if served at the actual wedding, would have been one layer chocolate sponge with chocolate ganache, second layer vanilla sponge with lemon custard and the top layer would be gluten free sponge with strawberries and cream. Gluten free? Well for the bride, of course. Sadly the bride can’t eat gluten and one must eat the cake at your own wedding.
Sapna and Damian leave for their week of fun and frivolity with friends and family on Tuesday and so I’m posting this today so they can see their cake. I’m sure the cake at the actual wedding will be nice, but it won’t be made with love!
Sapna and Damian you are the two of the best people I know and I wish you health, happiness and love!
